Baked Bananas


Ingredients:

  • 1 lb (500g) ripe Bananas.
  • 2 oz (60g) Butter.
  • 2 oz ( 60 g) Sugar.
  • 2 tbs Lemon juice.
  • 300 ml (1/2 pint whipped cream).

    Preparation:

    Slice each banana in half lenghtwise and then again across the width.

    Place in an ovenproof dish and cover with butter ,sugar and lemon juice. Bake in the oven at 200 degree cent/400 degree F for 15 minutes,basting once or twice.

    Serve with once or twice.



    Apple Crunch


    Ingredients:

  • 6 cups peeled and sliced apples .
  • 1/2 cup sugar .
  • 1 teaspoon cinnamon .
  • 3/4 cup flour .
  • 1/2 cup firmly packed brown sugar .
  • 1/4 cup softened butter .

    Preparation:

    In a bowl, combine sugar and cinnamon, add apples and toss to coat.

    Place apples in a greased 8" square pan or a 1 1/2 quart baking dish.

    Combine flour, brown sugar and butter and place mixture over apples.

    Bake at 350° for 45 to 50 minutes or until apples are tender and top is golden brown.

    CHOCOLATE MOUSSE


    Ingredients:

  • 10 oz. heavy cream.
  • 3 large egg yolks.
  • Half cup sugar.
  • 2 tablespoons water.
  • 8 oz. bittersweet chocolate.
  • 2 tablespoons unsalted butter.

    Preparation:

    Whip the heavy cream to soft peaks.

    In a separate bowl whisk the eggs.

    Combine the sugar and water in a saucepan and bring to a boil for one minute.

    Slowly pour the sugar mixture over the yolks, constantly whisking, and beat mixture again.

    Melt the chocolate and butter in a stainless steel bowl placed on top of a saucepan of simmering water.

    Remove the bowl from the heat and let cool until just warm.

    Fold in the egg mixture and then the whipped cream into the chocolate.

    Refrigerate the mousse until set, about two hours.

    Serve in a martini glass with a dollop of whipped cream and a mint leaf for garnish.


    Apricot Summer Sundae


    Ingredients:

  • 2- 1/2 cups Apricots (sliced, divided).
  • 2 tsp of Dark Brown Sugar.
  • 2 tsp grated Orange Peel.
  • 2 cups Vanilla nonfat frozen yogurt.
  • Raspberries.
  • Slivered orange peel.

    Preparation:

    In a bowl, combine 2 cups of apricots, brown sugar and grated orange peel.

    Spoon evenly into individual dessert dishes, then top with the vanilla frozen yogurt.

    Garnish with raspberries, remaining sliced apricots and slivered orange peel.Serve immediately
