Gojju Specials





Onion Gojju


Ingredients:

  • 1 lb (500g) Onion.
  • 25 gms Tamarind.
  • 2 tbs Pungent powder.
  • 1 tbs Mustard.
  • 5 to 6 Dry Chillis .
  • One Piece Jaggery .
  • 2 tbs Groundnut Oil .
  • Salt - as per taste .

    Preparation:

    Cut the Onion into pieces duly putting its husk. Then keep a pan on the oven pouring some oil.

    Then put the mustard and roast duly adding dry chillis,pieces of onion,tamarind juice,salt,pungent powder,a piece of jaggery all and fry mixing well - and keep down the pan from the oven.



    Cucumber Dasi Gojju


    Ingredients:

  • Cucumber - 1 big.
  • Coconut - 250gms.
  • Tamarind - 25gms.
  • Jaggery - 1 piece.
  • Gojjina Pudi - 2 tbs.
  • Mustard - 1 tbs.
  • Asafoetida - a bit.
  • Salt - As per taste.

    Preparation:

    Grate the husk of the cucumber and cut into small pieces, duly after washing.

    Then add salt , tamarind juice,jaggery,curry powder allalong with suitable quantity of water into the vessel of cucumber and boil over the oven duly.

    Then put mustard,asafortida in a pan of hot oil and pour into this mixing well.

    Hagalakayi (Bitter Gourd) Gojju


    Ingredients:

  • Bitter Gourd - 250 gms.
  • Tamarind - 25 gms.
  • Mustard - 1 tbs.
  • Pungent powder - 2 tbs.
  • Dry Chillies - 4.
  • Jaggery - 1 piece.
  • Oil - 2 tbs.
  • Salt - As per Taste.

    Preparation:

    Cut the bitter gourd into small pieces duly after washing.

    Then keep a pan over the oven and pour some oil.

    Then put the mustard,dry chillies,pieces of bitter gourd and fry duly.

    Then pour the tamarind juice duly squeezing ,put salt ,jaggery, pungent powder and boil duly. Then keep down the vessel.



    Bendekayi Gojju (Ladies Fingers Sauce)


    Ingredients:

  • Tender Ladies Finger - 250 gms.
  • Green Chilli - 5.
  • Coriander leaves - 1 bundle.
  • Coconut - 1/2 rind.
  • Mustard - 1 tbs.
  • Tamarind - 25 gms.
  • Oil - 4 tbs.
  • Salt - As per Taste.

    Preparation:

    Grind the coconut ,green chilli,coriander leaves,mustard,a piece of jaggery all in the stone mortar od grinder.

    Then fry the ladies fingers duly washing and cutting in in a pan of 4 spoons oil.

    Then add the grinded mixture into the pan of ladies finger, adding the tamarind juice,salt.

    After due boiling, put the mustard roasting in a pan of little oil mixing well.
