Ingredients:
6 small ears od corn
2 tsp melted butter
2 cloves of garlic , minced
2 tsp olive oil
3 firm vineripe red tomatos cut
in half
3 firm vineripe yellow tomatos cut
in half
1 bunch onion
1/4 cup fresh basil, chopped
2 tsp white vine vinegar
1 tsp frsh lime juice
2 tsp brown sugar
1 garlic clove
salt and pepper to taste
Method:
Preheat the grill to medium heat.
In a large pan cook the corn in large amount
of boiling water for 5-7 minutes and drain.
Place the corn on the grill,brush them with melted
butter,grill them untill the kernals turn to brown color.
In a bowl combine minced garlic and 2tsp olive oil,
brush then aside of tomatos and onions evenly with garlic
mixture,sprinkle evenly with salt and pepper.
Grill tomatos and onions for 2 minutes.
In a food processor combine basil,vinegar,lime juice,
brown sugar,garlic clove, salt and pepper.Process untill smooth paste.
Pour it in a bowl and whisk it with 1/4 cup of olive oil.
Add this to vegitables and toss them very well.
Garnish with additional basil leaves.
